Here's the deal. I hate waking up in the morning. I do. I really really do. I have to be at my 9-5 at 8:30 am. I live 10 minutes from work. If I took a shower the night before, and Noah is with his dad, I wake up at 8:00 am. Every morning I set my alarm for 7:30...7:40...7:50...and 8:00.

I.just.can't.get.out.of.bed. 

That means I have 20 minutes to brush my teeth, do my hair, get dressed, grab my lunch, and eat breakfast. Guess which one doesn't happen? Yup, breakfast.

Rewind a few months ago when I hosted a Pampered Chef party and the consultant, my friend Kristen, decided to make omelets in a brownie pan for the show. Ummm...genius! I bought that brownie pan. Let me be clear...I don't bake. So that brownie pan will only ever be used to make omelets.

SO! Here is how I make my brownie pan omelets on Sundays so I can grab them and go in the mornings!

Obviously I use my Pampered Chef brownie pan ;)

I use butter and a paper towel to coat each square. I know it's non stick but I don't like to risk it! And this is how my grandmother has always coated cake pans when she bakes a cake. (Check that chipped nail polish, yo! That's how I roll! Nail polish does not stay on my nails. That will be a later post. Maybe.)

You can use whatever fillings you want but I use green peppers, tomatoes, turkey or ham, and cheese.

I use my Pampered Chef chopper for the green peppers and tomatoes. I usually use Roma tomatoes but I had grape tomatoes on hand tonight.

I don't measure when I cook. I just eyeball. So this is what the squares look like once I've added all of the ingredients.

Ok...now time for the eggs. Most people would probably just take 12 eggs and whisk them all together at the same time. I just can't do that. I have to do one at a time. I mix them with milk too btw.

The reason I do this is because I know that for the most part one egg will fill one square, depending on how many fixings are in the square. 

Then I bake them in the oven at 375 for about 18 minutes. If it's still runny on top keep them in there for another minute or two.

As soon as I take them out I put my Pampered Chef cooling rack (are you seeing a trend here??) on top and flip them over to cool.

Andddd voila!

To prep for the week I put two in a snack bag. When I get to work I nuke them for 30-45 seconds! 

There ya go...my brownie pan omelets!

Brownie Pan Omelets

Preheat: 375        Cook time: 17-20 minutes

Butter
Tomatoes
Green Peppers
Deli turkey or ham
Shredded Cheese
Eggs
Milk

Preheat the oven to 375 degrees

Coat each square with butter.
Chop the tomatoes and spoon a small amount into each square.
Chop the green peppers and spoon a small amount into each square.
Chop the deli meat and spoon a small amount into each square.
Add some shredded cheese to each square. 
For the eggs you can either whisk 12 eggs together with some milk and fill each cup to the top or whisk one egg at a time with some milk and fill each cup to the top.
Put the pan into the oven for 17-20 minutes. 
When you take the pan out, flip it over to a cooling rack. 
Once the omelets are cool you can put them into the baggies.

When you reheat them, just pop them in the microwave for 30-45 seconds. Notttt in the snack bags!! Put them on a plate or a paper towel, people!
